Cured Tuna Poke Bowl

MARINATED TUNA POKE BOWL WITH WASABI MAYO.... by Kate Eason of Food Defined

This delicious bowl of goodness was our Friday evening meal on the February Retreat


It went something like this :)

Sashimi grade tuna (200gms for 2 people)

Marinade: olive oil, tamari, coconut aminos (fermented coconut blossom sauce), fresh lime juice (about 2), salt n pepper. Crushed garlic I think too!

Combine with chopped tuna in a bowl and refrigerate for a couple of hours. This will cure the tuna.

Poke bowl ingredients:

Cooked red and brown rice ( I always soak it for approx 6 hrs, then drain, rinse, and cook with fresh water).

Salad leaves

Daikon radish, julienned

Green apple, julienned

Spring onion, chopped

Fresh, flat leaf parsley chopped

Mayo:

Either make your own, or buy whole egg organic and add fresh grated wasabi root if you can find it, and fresh chopped wasabi leaves. Mix well and let sit for an hour to let flavours develop.

Build it up:

Rice first, then leaves, then sliced veg and spring onion, then mayo, then tuna. Parsley on top, and sprinkle some black sesame seeds too
